This simple recipe was inspired by my favorite fall/winter drinks – Old Fashioned’s and Manhattan’s. I’m pretty much a fan of most cocktails with bourbon or whiskey in them! This vegan dessert isn’t too sweet. The cinnamon, bourbon, and vanilla give it a warm, comforting flavor. It tastes rich but is actually light and low in calories. It’s really easy to make and is best made ahead of time.

Bourbon Spiked Vanilla Pudding (vegan)
Ingredients
- 1 lb (1 package) of silken tofu
- 1/4 cup maple syrup
- 3 tbs (or 1 shot) of your favorite bourbon
- 1 tsp vanilla extract
- 1 tsp arrowroot powder
- 1/4 tsp cinnamon
- 1/4 cup chopped pecans (for topping)
- 1 tbs muscovado sugar (for topping)
Directions
Wrap tofu in a clean towel for 10 minutes to remove excess water. Place tofu, maple syrup, cinnamon, vanilla extract, arrowroot powder, and bourbon in a high powered blender and blend until smooth. Pour into 4 small ramekins to set. Chill for at least 2 hours or overnight. Top with muscovado and chopped pecans and serve.
