I like to say that one can never have enough kitchen gadgets. Not surprisingly, I acquired a new one this week: a mini waffle maker. It costs about $11 and takes up minimal space. The one I purchased has 5 star reviews and is really cute. I highly recommend it for making mini waffles, crispy rice, mini-pizzas and other creative foods. This recipe for crispy rice has been trending on TikTok and I really needed to make it. I made it vegan by using avocado instead of sushi grade salmon. I also skipped the mayo to keep it light. Crispy rice is usually deep fried and really delicious.
I first tried it when I was in LA at the popular sushi spot called Krispy Rice. They used truffle oil and jalapeno to top it with and it was creamy and rich. The waffle maker version avoids deep frying and there’s no mess to clean up. I used Trader Joe’s precooked rice that you can steam in the microwave to make it super fast. This recipe can be made as a spicy, tasty snack anytime, and only took 15 minutes to prepare. You can check out the waffle maker I bought here. Don’t forget to check out my reel below. Waffle Maker Crispy Rice
- 1/2 cup cooked rice
- 1/2 avocado smashed
- 1/2 jalapeno pepper, thinly sliced
- 1 tbs chopped fresh cilantro
- 1 tbs fresh lime juice
- Sriracha sauce to taste
- Kosher salt to taste
- Olive oil spray
DirectionsPreheat waffle maker and spray both sides with olive oil. Spoon rice into waffle maker (use less rice if you prefer a thinner and crispier waffle). Spray rice with olive oil and close lid of waffle maker. If using a mini waffle maker, cook rice for about 8-10 minutes or until crispy and golden. Remove rice waffle from heat with tongs and allow to cool. Top with smashed avocado, lime juice, cilantro, jalapeno, kosher salt, and Sriracha sauce. Cut into quarters and serve while still warm and crispy.
