
Stone fruits are still going strong in the Midwest this August. There are just piles of peaches, plums, nectarines, and apricots everywhere. I was never a fan of peaches growing up – maybe the fuzzy peels made me reject them? I used to be a picky eater as a kid but now peaches are one my favorite summertime snacks. They pair well with so many savory items and are great in salsa. I like to throw them on the grill for a warm after dinner treat – even better with a scoop of ice cream! Desserts are probably what I’ve used peaches for the most. I crave fresh peach desserts and thought it would be amazing to have a dessert-like smoothie for breakfast. This smoothie has become a new favorite pretty quickly in my house. It’s got just the right amount of sweetness that’s balanced out by the oats. I’ve become a huge fan of oat milk. It’s great for coffee but even better in smoothies. It’s really thick and makes smoothies taste extra creamy. Instead of adding banana to this smoothie, I added cashew yogurt for thickness. Vanilla cashew yogurt is absolutely delicious but it doesn’t take over the entire flavor of the smoothie. The peach flavor really shines in this nutritious, easy breakfast.

Peaches are a really healthy fruit because they are low calorie (60 cal per peach), high fiber, and high in vitamin C. The beta carotene in them (also found in carrots) gives them their beautiful, golden color. Any variety of peach would go well in this smoothie and if you like your smoothies extra cold then you can freeze peach slices instead. I added Maca powder because it’s an energizing superfood that helps to keep me from crashing in the middle of the morning. You can find high quality Maca powder in most grocery stores these days and also online. I like Silk brand, unsweetened oat milk the best because it’s lower in calories vs. other brands of oat milk. I also prefer Forager brand vanilla cashew yogurt, mainly because it has a great texture (not too runny) and flavor. This tasty smoothie is really easy to put together and take with you on the go in the morning. It’s also really refreshing as a post work out recovery snack. Until next time, happy blending!

Peach Oat Milk Smoothie
Ingredients
- 1 cup oat milk
- 1/2 fresh peach, sliced
- 2 tbs oats
- 2 tbs vanilla cashew yogurt
- 1 tbs agave syrup
- 1 tsp Maca powder
Directions
Place all ingredients in a high powered blender and blend until smooth. Serve immediately. May store leftovers in an airtight container in the fridge for up to 24 hours.
